Roasted Baby Carrots with Za’atar

Serves 4 as a side dish

Ingredients:

2 bunches baby carrots, peeled and cut in half lengthwise

1 tsp sesame seeds, toasted

1 tsp dried thyme

1 tsp sumac

2 tbs extra virgin olive oil

salt and pepper

Method:

Toss the carrots in the olive oil and season with salt and pepper.

Place in a single layer on a roasting tray, cover with foil and roast at 190 degrees c for 15 minutes.

Remove the foil and return the carrots to the oven for a further 5 minutes so they get some colour.

Remove from the oven and sprinkle with a mixture of the sesame seeds, thyme and sumac.
