Tomato Braised Green Beans with Basil and Garlic

I love Tomato Braised Green Beans because it goes well with anything. Fish, chicken, beef, pork or lamb are all good matches.

Serves 4

Ingredients:

1 clove garlic, sliced

2 tbs extra virgin olive oil

500gm roma tomatoes, diced

250gm green beans

½ cup basil leaves

salt and pepper

Method:

Fry the garlic in olive oil for 30 seconds.

Add the tomatoes, beans, basil and salt and pepper, cover and cook over a low heat for about 30 minutes, or until the beans are meltingly soft and the tomatoes have broken down into a thick sauce.
